Here are the recipes I use.  The gingerbread dough is very firm and perfect for construction.  Warning –  the cookie may be a little hard for normal consumption, so you may need to dunk it in milk or coffee so you don’t chip a tooth!  The most important tip is to roll the dough out to the desired thickness and chill it in the refrigerator for two or more hours!
